It was with great pride that we were able to accompany Clotilde Ghibaudo, from the Pâtissiers du Carlton team in Cannes, who won the Concours des Jeunes Pâtissiers at the 15th International Festival of Gastronomy, Les Etoiles de Mougins, on Saturday September 14.
A local child, Clotilde chose to create a dessert with Provencal flavors, using one of the emblematic flowers of the Grasse region, orange blossom, so dear to her childhood memories.
Combined with verbena flowers, lemon, and notes of orgeat and aniseed, the result is a marvellously light and elegant creation: a Moorish-style Provençal soufflé ganse with lemon freshness.
